Ask if they have any French vegetarian recipe choices? /One of the best ways to avoid a disappointing experience at a French restaurant is to let them know your dietary requirements in advance. It takes a little more planning and organization, but it’s worth the extra effort. I did this at the Auberge du Bon Terroir in Muides-sur-Loire.

The chef and restaurant owner hadn’t created a meat-free dish in her restaurant before and she absolutely rose to the challenge for vegans in France. She created two courses that quickly became some of my favorite French vegetarian recipes during my stay. She did this by using only produce from her garden and was as thrilled as I was with the results. If a French chef can serve you a delicious meal, they will. It’s just easier if they have a little warning.

Use any color bell peppers you prefer, from brown to green, and anything in between. Also, use only good-quality olive oil (if you can get French extra-virgin oil from Provence, even better, though not imperative), as this contributes to the overall flavor of the dish.

I’ve mentioned before that in France, Belgian endive isn’t considered a luxury ingredient and is widely available, even in supermarkets, where it’s sold by the kilo (2.2 pound) bag. I seem to always have some since it’s so good added to a winter salad, perhaps with pears, pomegranates, and blue cheese, or braised and baked into a savory gratin.

The dough is pretty simple to put together. And since you’re not really going to see it, it doesn’t matter if the sides are perfect, or if it buckles and rises in places.

Because, the restaurateurs or the members of the various associations will tell you, “like the Savoyard fondue, the aligot by the ceremonial which is specific to it and which accompanies it, reinforces the friendship between the guests and unbridles the cordiality “. It is found in the markets of Aveyron and at all traditional festivals.

And there, I already feel the Alsatian thunderbolts falling on me ^_^. As it is unthinkable to make a clafoutis with anything other than cherries, the flammekueche has its rules. But then why call it a flammekueche? Because I have a good excuse to do it!

The cassoulet, then! I had never cooked it being omni, and even less being veggie! So I documented myself (yes, perfectly), and I realized that it was a very serious matter! There are even cassoulet brotherhoods that exist!!! So, I put a little pressure on myself, when in fact, it’s very easy to do!!

The only trick is to plan ahead long enough to soak the beans, pre-cook them, and finish cooking in the oven for long time….. I chose to put smoked tofu and vegetable sausages also smoked, I recommend it, the smoked taste really brings out the taste of the beans.
