Method
- Preheat oven to 350°F. Spray an 8×11” or 9×13″ baking dish with cooking spray.
- Start by washing and preparing your vegetables. I chopped mine using a food processor.
- Next, prepare a large skillet over medium heat. Add the minced beef and season with salt and pepper to taste. Cook until the meat is no longer pink,
- stirring frequently and separating into smaller pieces as you go. Then, transfer the cooked beef to a large mixing basin.
- Spray the same skillet with cooking spray. Add the diced pepper, onion, and mushrooms and cook on medium heat until vegetables are tender, about 6-7 minutes. Then, transfer the veggies to the same large mixing basin with the beef.
- Then, in a separate mixing basin, add all the sloppy joe sauce ingredients. Whisk to incorporate. Pour sauce into the bowl with the beef and vegetables and stir.
- Add sloppy joe mixture to the prepared casserole dish. Sprinkle cheese on top.
- Cut each biscuit into four pieces and position evenly across the top.
- Lastly, bake for 25 minutes, or until the peaks of biscuits are golden brown.
