Ingredients
  

Meat
  • 1 lb. ground beef 96% lean
  • 1 bell pepper medium yellow diced
  • 1 yellow onion diced
  • 8 oz. mushrooms bella finely diced
  • 1/2 cup cheese 2% shredded Colby jack
  • 1 10.2- can GRANDS homestyle buttermilk biscuits 5 ct. GRANDS homestyle
Sloppy Joe Sauce:
  • 1 can tomato sauce 226g I recommend Muir Glen brand
  • 1/2 cup ketchup
  • 2 cloves garlic minced
  • 2 tbsp Worcestershire sauce 30g
  • 1 tbsp sugar brown
  • 2 tsp mustard powder dry
  • 1 tsp onion powder

Method
 

  1. Preheat oven to 350°F. Spray an 8×11” or 9×13″ baking dish with cooking spray.
  2. Start by washing and preparing your vegetables. I chopped mine using a food processor.
  3. Next, prepare a large skillet over medium heat. Add the minced beef and season with salt and pepper to taste. Cook until the meat is no longer pink,
  4. stirring frequently and separating into smaller pieces as you go. Then, transfer the cooked beef to a large mixing basin.
  5. Spray the same skillet with cooking spray. Add the diced pepper, onion, and mushrooms and cook on medium heat until vegetables are tender, about 6-7 minutes. Then, transfer the veggies to the same large mixing basin with the beef.
  6. Then, in a separate mixing basin, add all the sloppy joe sauce ingredients. Whisk to incorporate. Pour sauce into the bowl with the beef and vegetables and stir.
  7. Add sloppy joe mixture to the prepared casserole dish. Sprinkle cheese on top.
  8. Cut each biscuit into four pieces and position evenly across the top.
  9. Lastly, bake for 25 minutes, or until the peaks of biscuits are golden brown.

Notes

Brown the ground beef evenly for better flavor.
Drain excess fat after browning the beef.
Use a preheated oven for even baking.
Monitor the biscuits to avoid overbaking.
Let the casserole rest before serving.
Customize with cheese or herbs for extra flavor.
Serve with a fresh salad for a balanced meal.
