Samlor Kako Small Fish and Vegetables recipe, is a substantial blend of seasonal vegetables, unripe fruit, and meat of your choosing, seasoned with the tangy, lemony taste of lemongrass.

Ingredients

  • 2 lbs small fish (such as tilapia), cleaned and scaled
  • 2 tbsp vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 2 cups water
  • 2 potatoes, peeled and sliced
  • 2 carrots, sliced
  • 1 cup cherry tomatoes
  • 2 tbsp chopped cilantro
  • 2 tbsp chopped basil

Equipment

  • Large saucepan or wok

  • Wooden spoon or spatula

Method

  1. In a large saucepan, heat the vegetable oil over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic and cook until fragrant, about 30 seconds.
  3. Add the fish sauce, sugar, and water. Stir to combine and bring to a boil.
  4. Reduce the heat to low and simmer for 5-7 minutes or until the sauce has thickened.
  5. Add the potatoes, carrots, cherry tomatoes, and small fish. Stir to combine and cook for an additional 10-12 minutes or until the vegetables are tender and the fish is cooked through.
  6. Serve hot, topped with the cilantro and basil.

Notes

Tips and Tricks

 
To make the dish spicier, add more red pepper flakes to the sauce.
