Ingredients

  • 4 smoked kahawai fillets skin and bones removed
  • 1/2 kg cooked Kumara roughly chopped
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh chives
  • 1/4 cup chopped fresh mint
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tbsp wholegrain mustard
  • 1 tbsp lemon juice
  • 1/2 tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • 2 cups mixed salad greens
  • 1/2 red onion thinly sliced
  • 1 lemon cut into wedges

Method

  1. In a large bowl, flake the smoked kahawai fillets into small pieces.
  2. Add the chopped herbs, sour cream, mayonnaise, wholegrain mustard, lemon juice, sea salt, and black pepper to the bowl. Mix well.
  3. Add the chopped cooked potatoes to the bowl and mix until well combined.
  4. Divide the mixed salad greens and sliced red onion among 8 serving plates.
  5. Spoon the smoked kahawai and potato mixture over the salad greens.
  6. Warm mixture in skilllet.
  7. Garnish each plate with a lemon wedge.
  8. Serve and enjoy!
