Ingredients

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup unsalted butter melted
  • 1/2 cup milk
  • 2 large eggs beaten
  • 1/2 cup chopped fresh chives
  • 1 cup cooked salmon flaked
  • 1/4 cup grated parmesan cheese

Method

  1. Preheat oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  2. In a large mixing bowl, whisk together the flour, cornmeal, baking powder, baking soda, salt, and black pepper.
  3. In a separate bowl, mix together the melted butter, milk, and beaten eggs.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the chopped chives, cooked salmon, and grated parmesan cheese.
  6. Spoon the batter into the prepared muffin tin, filling each muffin cup about 2/3 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow muffins to cool for a few minutes in the tin, then transfer to a wire rack to cool completely.

Notes

Tips and Tricks

Use a fork to break up any large clumps in the flaked salmon before adding it to the batter.
To make the muffins more flavorful, you can add chopped sun-dried tomatoes, capers or olives to the batter.
Be careful not to overmix the batter, as this can make the muffins tough.
