Ingredients

  • 7 oz malt biscuits crushed
  • 1 cup desiccated coconut
  • 3.5 oz butter melted
  • 7 oz sweetened condensed milk
  • 5.3 oz fruit puffs chopped into small pieces
  • Extra desiccated coconut for rolling

  • Loaf pan
  • Baking paper
  • Plastic wrap

Method

  1. In a large bowl, mix together the crushed malt biscuits and desiccated coconut.
  2. Add in the melted butter and sweetened condensed milk, and mix until well combined.
  3. Fold in the chopped fruit puffs.
  4. Line a loaf pan with baking paper, and press the mixture firmly into the pan.
  5. Sprinkle extra desiccated coconut over the top of the mixture.
  6. Cover the pan with plastic wrap and refrigerate for at least 2 hours, or until the mixture is firm.
  7. Remove from the pan and slice into 8 even portions.
  8. Serve and enjoy!

Notes

Tips and Tricks

Use a food processor to crush the biscuits and chop the fruit puffs for easier and more even mixing.
Make sure to press the mixture firmly into the pan to ensure that it sets properly.
If the mixture is too sticky to handle, wet your hands slightly before pressing it into the pan.
