Ingredients

  • 2 lbs of firm white fish fillets such as cod or haddock
  • 1 cup of all-purpose flour
  • 3 eggs beaten
  • 2 cups of breadcrumbs
  • 1 tsp of salt
  • 1 tsp of paprika
  • 1 tsp of garlic powder
  • 1 tsp of onion powder
  • 4 large kumara sweet potatoes, peeled and cut into chips
  • 2 tbsp of olive oil

Equipment

  • Baking trays
  • Mixing bowls
  • Measuring cups and spoons
  • Peeler

Method

  1. Preheat your oven to 400°F (200°C).
  2. Cut the fish fillets into 8 equal portions and set aside.
  3. In three separate bowls, place the flour, beaten eggs, and breadcrumbs.
  4. Add the salt, paprika, garlic powder, and onion powder to the breadcrumbs, and mix well.
  5. Coat each fish portion in the flour, then dip into the beaten eggs, and finally coat with the seasoned breadcrumbs.
  6. Place the crumbed fish portions onto a lined baking tray and bake in the preheated oven for 15-20 minutes or until golden brown.
  7. While the fish is baking, toss the kumara chips in olive oil and place on another lined baking tray.
  8. Bake the kumara chips for 25-30 minutes or until crispy and golden.
  9. Serve the crumbed fish and kumara chips immediately with your favorite dipping sauce.
