Ingredients
  

  • 2 cups of white rice
  • 1 can of red kidney beans
  • 1 can of coconut milk
  • 1 small onion
  • 2 cloves of garlic
  • 1 teaspoon of dried thyme
  • 1 teaspoon of salt
  • 3 cups of water

Method
 

  1. Rinse the rice and set aside.
  2. In a large pot, sauté the chopped onion and garlic until they become fragrant.
  3. Add the rice, beans, coconut milk, thyme, salt, and water to the pot.
  4. Stir well to combine all the ingredients.
  5. Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
  6. Allow the rice and beans to simmer for about 25 minutes, or until the liquid has been absorbed and the rice is fully cooked.
  7. Fluff the rice with a fork and serve hot.

Notes

Rinse the rice before cooking to remove any excess starch.
Use a can of beans with no added salt to control the sodium content.
