- Rinse the rice and set aside.
- In a large pot, sauté the chopped onion and garlic until they become fragrant.
- Add the rice, beans, coconut milk, thyme, salt, and water to the pot.
- Stir well to combine all the ingredients.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
- Allow the rice and beans to simmer for about 25 minutes, or until the liquid has been absorbed and the rice is fully cooked.
- Fluff the rice with a fork and serve hot.
