- Preheat the oven to 350°F.
- In a large mixing bowl, combine the cornmeal, brown sugar, cinnamon, nutmeg, and salt. Mix well.
- Add the coconut milk, water, and vanilla extract to the mixing bowl. Stir to combine.
- Add the raisins and butter to the mixture. Mix until everything is well combined.
- Grease an 8x8 inch baking dish with butter.
- Pour the mixture into the baking dish.
- Bake in the preheated oven for 1 hour or until the pudding is set.
- Let the pudding cool for 10-15 minutes before serving.
