Ingredients
  

  • 1 cup of cornmeal
  • 1 can of coconut milk
  • 1 cup of brown sugar
  • 1 teaspoon of cinnamon
  • 1 teaspoon of nutmeg
  • 1/4 teaspoon of salt
  • 1/4 cup of raisins
  • 2 tablespoons of butter
  • 1 teaspoon of vanilla extract
  • 2 cups of water

Method
 

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, combine the cornmeal, brown sugar, cinnamon, nutmeg, and salt. Mix well.

  4. Add the raisins and butter to the mixture. Mix until everything is well combined.
  5. Grease an 8x8 inch baking dish with butter.
  6. Pour the mixture into the baking dish.
  7. Bake in the preheated oven for 1 hour or until the pudding is set.
  8. Let the pudding cool for 10-15 minutes before serving.
