Ingredients

  • 6 to 7 sheets of filo pastry
  • 1.1 lb chicken breast, cut into small pieces
  • 2 tbsp. olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 tbsp. green curry paste
  • 1 tbsp. fish sauce
  • 1 tbsp. soy sauce
  • 1 can coconut milk
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 cup fresh basil, chopped
  • 1/2 cup fresh mint, chopped
  • 1/2 cup fresh coriander, chopped
  • Salt and pepper to taste

Equipment

  • Large pan
  • Mixing bowls
  • Pastry brush
  • Oven-safe dish or pie dish
  • Sharp knife and Cutting board

Method

  1. Preheat the oven to 350°F (180°C).
  2. In a large pan, heat the olive oil over medium-high heat. Add the onion and garlic and sauté for 2-3 minutes, until softened.
  3. Add the chicken to the pan and cook until browned on all sides.
  4. Stir in the green curry paste, fish sauce, soy sauce, and coconut milk. Bring to a simmer and let cook for 5-7 minutes.
  5. Add the sliced bell peppers, chopped herbs, and salt and pepper to the pan. Cook for another 5 minutes until the vegetables are softened and the flavors have melded together.
  6. Remove the pan from the heat and let cool slightly.
  7. Layer the filo pastry sheets on top of each other, brushing each layer with olive oil as you go.
  8. Place the chicken curry mixture on top of the filo pastry, leaving a border around the edges.
  9. Fold the edges of the pastry up and over the filling, creating a rustic-looking pie.
  10. Bake the pie in the preheated oven for 25-30 minutes, or until the pastry is golden brown and crispy.
  11. Let the pie cool for a few minutes before slicing and serving.
