Ingredients

For the Shrimp:
  • 1 pounds Argentine red shrimp peeled and deveined
  • 2 tbsp olive oil
  • salt an pepper to taste
For the Chimichurri Sauce:
  • 1 cup fresh parsley leaves chopped
  • ½ cup fresh cilantro leaves chopped
  • 3 garlic cloves minced
  • ¼ cup red wine vinegar
  • ½ cup olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes

Equipment

  • Grill or grill pan

  • Blender or food processor

Method

  1. Preheat grill or grill pan to medium-high heat.
  2. In a large bowl, toss the peeled and deveined shrimp with olive oil, salt, and pepper.
  3. Grill the shrimp for 2-3 minutes per side or until they are cooked through and slightly charred. Set aside.
  4. In a blender or food processor, combine parsley, cilantro, garlic, red wine vinegar, olive oil, salt, black pepper, and red pepper flakes. Blend until smooth.
  5. Serve the grilled shrimp with a generous drizzle of chimichurri sauce on top.
