Ingredients

  • 3 - 4 Tbsp fresh lemon juice
  • ¼ Cup olive oil extra virgin or light
  • 1 tsp maple syrup
  • 1 pinch salt
  • 1 pinch black pepper
  • 3 Tbsp minced shallots optional

Method

  1. For best results, blend all of the ingredients together in a small blender to create an emulsion and fully incorporate the shallot. If you don't have a shallot on hand, just combine everything in a small bowl and whisk.
  2. Blend all ingredients in a small blender on high until completely smooth and creamy.
  3. Adjust the taste by adding more salt, pepper, lemon juice, olive oil, maple syrup, or any other ingredient you deem necessary.
  4. Sprinkle on hot or cold salads, roasted vegetables, and anything else right away! Put it in the fridge for three to four days. Be sure to give it a good shake before using, as the oil may solidify in the fridge.
