Instructions
Preheat your oven to 375°F.
In a small bowl, whisk together the maple syrup, soy sauce, balsamic vinegar, garlic, paprika, salt, and pepper.
Season the chicken thighs with salt and pepper.
In a Dutch oven, heat the olive oil over medium-high heat.

Add the onions and peaches to the Dutch oven and cook for 5-6 minutes until softened.
Return the chicken thighs to the Dutch oven, skin-side up, and pour the maple syrup mixture over the top.
Cover the Dutch oven with a lid and bake in the oven for 35-40 minutes until the chicken thighs are cooked through.
