Instructions
Preheat oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
In a large mixing bowl, whisk together the flour, cornmeal, baking powder, baking soda, salt, and black pepper.
In a separate bowl, mix together the melted butter, milk, and beaten eggs.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Fold in the chopped chives, cooked salmon, and grated parmesan cheese.
Spoon the batter into the prepared muffin tin, filling each muffin cup about 2/3 full.
Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Allow muffins to cool for a few minutes in the tin, then transfer to a wire rack to cool completely.
