New Zealand Salmon and Chive Muffins Recipe

Ingredients

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup unsalted butter melted
  • 1/2 cup milk
  • 2 large eggs beaten
  • 1/2 cup chopped fresh chives
  • 1 cup cooked salmon flaked
  • 1/4 cup grated parmesan cheese

Instructions

  • Preheat oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  • In a large mixing bowl, whisk together the flour, cornmeal, baking powder, baking soda, salt, and black pepper.
  • In a separate bowl, mix together the melted butter, milk, and beaten eggs.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Fold in the chopped chives, cooked salmon, and grated parmesan cheese.
  • Spoon the batter into the prepared muffin tin, filling each muffin cup about 2/3 full.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow muffins to cool for a few minutes in the tin, then transfer to a wire rack to cool completely.

Notes

Tips and Tricks

Use a fork to break up any large clumps in the flaked salmon before adding it to the batter.
To make the muffins more flavorful, you can add chopped sun-dried tomatoes, capers or olives to the batter.
Be careful not to overmix the batter, as this can make the muffins tough.
