Equipment

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 ripe kiwi fruit peeled and mashed
  • 1/2 cup chopped walnuts

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  • In a medium bowl, sift together the flour, baking powder, baking soda, and salt.
  • In a large bowl, cream together the softened butter and sugar until light and fluffy.
  • Beat in the eggs, one at a time, then stir in the vanilla extract.
  • Gradually mix in the flour mixture until just combined.
  • Fold in the mashed kiwi fruit and chopped walnuts.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 60-70 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  • Allow the bread to cool in the pan for 10 minutes before removing and placing it onto a wire rack to cool completely.

Tips and Tricks

Make sure to thoroughly mix the wet and dry ingredients separately before combining them to ensure the bread is evenly mixed.
To make the bread healthier, you can reduce the amount of sugar or substitute it with a natural sweetener like maple syrup or honey.
If you don't have a hand mixer or stand mixer, you can mix the ingredients by hand using a whisk or fork.
