Ingredients

  • 2 lbs beef chuck roast cut into 1-inch cubes
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup all-purpose flour
  • 1 cup beef broth
  • 1 cup grated cheddar cheese
  • 2 sheets puff pastry
  • 1 egg beaten

Instructions

  • Preheat the oven to 375°F.
  • In a large skillet, heat some oil over medium-high heat. Add the beef and cook until browned on all sides.
  • Add the onion, garlic, thyme, salt, and pepper to the skillet and cook for another 2-3 minutes.
  • Sprinkle the flour over the mixture and stir to combine.
  • Slowly pour in the beef broth while stirring constantly.
  • Reduce the heat to low and let the mixture simmer for 10-15 minutes, until the sauce has thickened.
  • Remove from heat and stir in the grated cheddar cheese.
  • Roll out the puff pastry sheets and cut out 8 circles (using a bowl or biscuit cutter).
  • Divide the beef and cheddar mixture evenly among the circles.
  • Brush the edges of the pastry with the beaten egg and then fold over the pastry to create a half-moon shape. Use a fork to crimp the edges.
  • Brush the tops of the pies with the beaten egg.
  • Place the pies on a baking sheet and bake for 20-25 minutes, until the pastry is golden brown and crispy.
  • Serve hot and enjoy!

Notes

Tips and Tricks

Make sure the beef is cut into even-sized pieces to ensure even cooking.
Allow the filling to cool slightly before filling the pastry, as this will prevent the pastry from becoming soggy.
You can use store-bought puff pastry to save time.
Brushing the tops of the pies with beaten egg will give them a nice golden brown color and a crispy texture.
