I stumbled upon the New Zealand Beef & Cheddar Pie recipe and was intrigued. As a lover of hearty meat pies, I was excited to try out this unique recipe that combines tender beef, savory cheddar cheese, and a flaky pastry crust.
In a large skillet, heat some oil over medium-high heat. Add the beef and cook until browned on all sides.
Add the onion, garlic, thyme, salt, and pepper to the skillet and cook for another 2-3 minutes.
Sprinkle the flour over the mixture and stir to combine.
Slowly pour in the beef broth while stirring constantly.
Reduce the heat to low and let the mixture simmer for 10-15 minutes, until the sauce has thickened.
Remove from heat and stir in the grated cheddar cheese.
Roll out the puff pastry sheets and cut out 8 circles (using a bowl or biscuit cutter).
Divide the beef and cheddar mixture evenly among the circles.
Brush the edges of the pastry with the beaten egg and then fold over the pastry to create a half-moon shape. Use a fork to crimp the edges.
Brush the tops of the pies with the beaten egg.
Place the pies on a baking sheet and bake for 20-25 minutes, until the pastry is golden brown and crispy.
Serve hot and enjoy!
