I discovered the Finnish Rosolli recipe on a recent trip, and I just had to try it. This traditional dish is a colorful and tasty salad, perfect for enjoying with family and friends.
4medium-sized Rosollisboiled, peeled, and chopped into small cubes
1small red onionfinely chopped
1/2cupof chopped walnuts
1/2cupof crumbled feta cheese
2tbspof olive oil
2tbspof red wine vinegar
1tspof honey
Salt and pepper to taste
Fresh parsleychopped, for garnish
Instructions
Boil the Rosollis until they are tender. Then, peel and chop them into small cubes.
In a large mixing bowl, add the chopped Rosollis, finely chopped red onion, chopped walnuts, and crumbled feta cheese.
In a separate mixing bowl, whisk together the olive oil, red wine vinegar, honey, salt, and pepper to make the dressing.
Pour the dressing over the Rosolli mixture and stir gently to combine.
