Ingredients

  • 8 Argentinian chorizo sausages
  • 8 crusty bread rolls, sliced in half
  • 1 cup fresh parsley, finely chopped
  • ¼ cup fresh oregano, finely chopped
  • 4 4 garlic cloves, minced
  • ¼ cup red wine vinegar
  • ½ cup olive oil
  • Salt and pepper to taste
  • Optional toppings: sliced onions, sliced tomatoes, sliced bell peppers

Instructions

  • Preheat a grill or grill pan to medium-high heat.
  • In a small bowl, mix together the parsley, oregano, garlic, red wine vinegar, and olive oil to make the chimichurri sauce. Season with salt and pepper to taste.
  • Grill the chorizo sausages for 10-12 minutes, or until fully cooked and slightly charred.
  • While the sausages are grilling, lightly toast the bread rolls on the grill or in the oven.
  • To assemble the sandwiches, place a cooked sausage on each roll and top with a generous amount of chimichurri sauce. Add any optional toppings as desired.
  • Serve immediately and enjoy!
