Instructions
Preheat a grill or grill pan to medium-high heat.
In a small bowl, mix together the parsley, oregano, garlic, red wine vinegar, and olive oil to make the chimichurri sauce. Season with salt and pepper to taste.
Grill the chorizo sausages for 10-12 minutes, or until fully cooked and slightly charred.
While the sausages are grilling, lightly toast the bread rolls on the grill or in the oven.
To assemble the sandwiches, place a cooked sausage on each roll and top with a generous amount of chimichurri sauce. Add any optional toppings as desired.
