Samlor Kako Small Fish and Vegetables recipe, is a substantial blend of seasonal vegetables, unripe fruit, and meat of your choosing, seasoned with the tangy, lemony taste of lemongrass.
2lbssmall fish (such as tilapia), cleaned and scaled
2tbspvegetable oil
1onion, sliced
2cloves garlic, minced
2tbspfish sauce
1tbspsugar
2cupswater
2potatoes, peeled and sliced
2carrots, sliced
1cupcherry tomatoes
2tbspchopped cilantro
2tbspchopped basil
Instructions
In a large saucepan, heat the vegetable oil over medium heat. Add the onion and cook until softened, about 5 minutes.
Add the garlic and cook until fragrant, about 30 seconds.
Add the fish sauce, sugar, and water. Stir to combine and bring to a boil.
Reduce the heat to low and simmer for 5-7 minutes or until the sauce has thickened.
Add the potatoes, carrots, cherry tomatoes, and small fish. Stir to combine and cook for an additional 10-12 minutes or until the vegetables are tender and the fish is cooked through.
Serve hot, topped with the cilantro and basil.
