Campfire Foil Packet Garlic Lemon Chicken Breasts and Asparagus

Ingredients
  

  • 8 slices lemon
  • 1/4 cup plain yogurt
  • 1 tsp thyme leaves (or about 1/4 teaspoon dried thyme)
  • 1 clove garlic minced
  • 2 tsp kosher salt
  • 2 tsp black pepper freshly ground
  • 2 lb chicken boneless chicken breasts, about 8 oz. each
  • 16 cherry tomatoes
  • 1 lb red potatoes sliced about 1/4 inch thick
  • 1 lb fresh asparagus
  • 1 tbsp olive oil
  • 1/4 cup parmesan cheese
  • 4 tbsp water

Method
 

  1. Make the marinade by combining the Greek yogurt, the juice of the lemon, thyme, garlic, 1 teaspoon salt, and a few grinds of pepper
  2. Make the garlic marinade, add the marinade to a plastic bag. Add the chicken breasts after pirecing with a fork and leave for 4 hours.
  3. Add the tomatoes, potatoes, asaparagus, parmesan cheese, olive oil salt and pepper and mix together.
  4. Create a campfire with a bed of glowing hot coals. Follow the instructions provided and create 4 foil packets
  5. Add the potatoes evenly between the packets. Place the chicken on top of the potatoes, then the slices of lemon and last the asparagus. Add a tbsp of water to each packet.
  6. Place the packets on a medium-high grill for about 20 minutes, or until potatoes are soft and chicken is cooked. Usually 25-30 minutes.
  7. Open up your packets and serve with additional parmesan cheese and lemon juice.
