I recently discovered a delightful Vegetarian Caramelized Endive and Blue Cheese Tart recipe that I can't wait to share with you.

Ingredients

  • 1 sheet of frozen puff pastry thawed
  • 4 endives
  • 2 tablespoons unsalted butter
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces blue cheese crumbled
  • 2 large eggs
  • 1/4 cup heavy cream

Method

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the thawed puff pastry sheet on a lightly floured surface until it forms a rectangular shape.
  3. Transfer the rolled-out pastry onto a baking sheet lined with parchment paper.
  4. Trim the bottoms of the endives and remove any damaged outer leaves. Cut each endive in half lengthwise.
  5. In a large skillet, melt the butter over medium heat. Add the sugar and stir until it dissolves.
  6. Place the endive halves in the skillet, cut side down. Cook for about 5 minutes, until the cut side is caramelized and golden brown.
  7. Flip the endive halves and cook for an additional 3 minutes. Season with salt and black pepper.
  8. Arrange the caramelized endive halves evenly on top of the puff pastry, cut side down.
  9. Sprinkle the crumbled blue cheese over the endives.
  10. In a small bowl, whisk together the eggs and heavy cream. Pour the mixture evenly over the tart.
  11. Bake in the preheated oven for approximately 20-25 minutes, or until the puff pastry is golden brown and the filling is set.
  12. Remove from the oven and let it cool slightly before serving.
