Ingredients
  

For the Pork Roast
  • 3 lb. pork loin
  • 2 tbsp. salt
  • 1 tsp. black pepper freshly ground
  • 4 cloves garlic peeled and gently smashed with the side of your knife
  • 1/4 teaspoon red chili flakes dried
  • 1 tsp. cumin ground
  • 1 tsp. paprika smoked
  • 1 tablespoon oregano dried
  • Juice and zest of 1/2 orange
  • 1/2 lime Juiced
  • 1/2 lemon Juiced
  • 1/4 cup olive oil extra-virgin
  • 1 cup low-sodium chicken broth
  • 2 bay leaves
For the Sandwiches
  • 1 rolls Cuban-style bread roll or 6 hero
  • 4 tbsp. Dijon mustard
  • 12 boiled ham thin slices
  • 12 roast pork thin slices
  • 1 c. bread and butter pickles
  • 12 swiss cheese thin slices
  • 5 tbsp. butter
  • Potato chips for serving

Method
 

Prepare the Pork Roast:
  1. a. Preheat the oven to 325°F (165°C).
  2. b. In a small bowl, combine the kosher salt, black pepper, garlic, dried red chili flakes, ground cumin, smoked paprika, dried oregano, orange zest, lime juice, lemon juice, and extra-virgin olive oil. Mix well to form a paste.
  3. c. Rub the paste all over the boneless pork loin, ensuring it is evenly coated.
  4. d. Place the pork loin in a roasting pan and pour the chicken broth into the pan. Add the bay leaves.
  5. e. Cover the roasting pan tightly with aluminum foil.
  6. f. Roast the pork in the preheated oven for about 2 to 2.5 hours, or until the internal temperature reaches 145°F (63°C).
  7. g. Remove the pork from the oven and let it rest for 15 minutes before slicing.
Assemble the Sandwiches:
  1. a. Preheat a griddle or panini press over medium heat.
  2. b. Slice the Cuban-style bread roll or hero rolls in half horizontally.
  3. c. Spread a tablespoon of Dijon mustard on the bottom half of each roll.
  4. d. Layer 3 slices of boiled ham, 3 slices of roast pork, a generous amount of bread and butter pickles, and 2 slices of Swiss cheese on each roll.
  5. e. Place the top half of the roll over the fillings to form a sandwich.
  6. f. Spread butter on the outer sides of the sandwiches.
  7. g. Place the sandwiches on the preheated griddle or panini press and cook for about 3 to 4 minutes per side, or until the bread is golden brown and the cheese is melted.
  8. h. Remove the sandwiches from the griddle or panini press and let them rest for a minute before serving.

  1. a. Cut each sandwich in half diagonally to create two triangular halves.
