Ingredients

  • 2 lbs. of yucca root
  • 1 cup of sugar
  • 1 tsp. of salt
  • 1 tsp. of cinnamon
  • 1 tsp. of vanilla extract
  • 1 cup of all-purpose flour
  • 1 cup of vegetable oil
  • 1 cup of water

Equipment

  • Cheese grater or food processor
  • Mixing bowl
  • Skillet or frying pan
  • Slotted Spoon

Method

  1. Peel and wash the yucca root. Grate it finely using a cheese grater or a food processor.
  2. In a mixing bowl, combine the grated yucca, sugar, salt, cinnamon, vanilla extract, and all-purpose flour. Mix well until all ingredients are fully incorporated.
  3. Gradually add water to the mixture while stirring continuously until it forms a sticky dough.
  4. Using your hands, form small balls (about 2 inches in diameter) with the dough.
  5. In a deep skillet or frying pan, heat the vegetable oil over medium-high heat.
  6. Once the oil is hot, add the yucca balls to the pan, being careful not to overcrowd the pan. Fry for about 5-7 minutes, or until they turn golden brown.
  7. Use a slotted spoon to remove the yucca balls from the pan and place them on a paper towel to drain the excess oil.
  8. Serve warm and enjoy!

Tips and Tricks

To make the grating process easier, you can use a food processor with a grating attachment.
If the dough is too sticky, add more flour little by little until it reaches the desired consistency.
Be sure not to overcrowd the pan while frying to prevent the nuegados from sticking together.
