Ingredients

  • 6 large tomatoes, diced
  • 1 large white onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1/2 cup chopped cilantro
  • 1/4 cup white vinegar
  • 1/4 olive oil
  • Salt and pepper, to taste

Method

  1. In a large mixing bowl, combine the diced tomatoes, white onion, green and red bell pepper, and cilantro. Mix well.
  2. In a separate small mixing bowl, whisk together the white vinegar and olive oil.
  3. Pour the vinegar and oil mixture over the tomato mixture, and toss until everything is well coated.
  4. Add salt and pepper to taste.
  5. Cover the mixing bowl with plastic wrap and refrigerate for at least 30 minutes before serving.
