Today I want to tell you about the Salvadoran Breakfast Casamiento recipe.

Ingredients

  • 2 cups cooked white rice
  • 2 cups cooked red beans
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped green bell pepper
  • 1/4 cup finely chopped red bell pepper
  • 2 garlic cloves, minced
  • 2 tbsp. vegetable oil
  • 8 corn tortillas
  • 8 eggs
  • Salt and pepper to taste

Equipment

  • 2 skillets (one for sautéing the vegetables and one for frying the eggs)
  • Mixing bowl
  • Cutting board and knife
  • Spatula
  • Microwave or additional skillet (for heating up the tortillas)

Method

  1. In a large mixing bowl, mix the cooked white rice and red beans together.
  2. In a skillet over medium heat, sauté the chopped onion, green bell pepper, red bell pepper, and minced garlic in vegetable oil until the onions are translucent.
  3. Add the rice and bean mixture to the skillet and mix everything together until it's heated through. Add salt and pepper to taste.
  4. In another skillet, fry the eggs to your desired level of doneness.
  5. Heat up the corn tortillas in the microwave or in a separate skillet.
  6. Serve the casamiento rice and bean mixture on a plate, topped with a fried egg, and with a heated corn tortilla on the side.

Cook the rice and beans ahead of time to save time.
Use canned beans if you don't have time to cook dried beans.
