I'm excited to tell you about the Salvadoran Atol de Elote recipe. A delicious Salvadoran drink I heard about from a friend who visited there.

Ingredients

  • 6 ears of fresh corn kernels removed
  • 4 cups of water
  • 1 cup of milk
  • 1/2 cup of sugar
  • 1/4 teaspoon of salt
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of vanilla extract

Equipment

  • blender
  • fine mesh sieve
  • Large Saucepan
  • Stirring spoon

Method

  1. In a blender, puree the corn kernels with 2 cups of water until smooth.
  2. Strain the puree through a fine-mesh sieve into a large saucepan, discarding the solids.
  3. Add the remaining 2 cups of water, milk, sugar, salt, cinnamon, and nutmeg to the saucepan.
  4. Place the saucepan over medium heat and stir the mixture constantly until it comes to a boil.
  5. Reduce the heat to low and simmer for 15-20 minutes, stirring occasionally, until the mixture thickens.
  6. Remove the saucepan from the heat and stir in the vanilla extract.
  7. Serve hot, garnished with a sprinkle of ground cinnamon on top.

Notes
