Ingredients

  • 1 bone-in lamb shoulder roast 5-6 lbs
  • 6 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh thyme chopped
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 cup chicken or beef broth

Method

  1. Preheat the oven to 350°F (175°C).
  2. Mix the garlic, rosemary, thyme, olive oil, salt, and black pepper together in a small bowl.
  3. Rub the herb mixture all over the lamb shoulder roast.
  4. Place the lamb in a roasting pan and pour the broth into the pan.
  5. Cover the pan with foil and roast in the preheated oven for 3-4 hours, or until the lamb is very tender.
  6. Remove the foil and increase the oven temperature to 450°F (230°C). Roast for an additional 15-20 minutes, or until the lamb is browned on top.
  7. Remove the lamb from the oven and let it rest for 10-15 minutes before slicing and serving.
