I recently discovered a fantastic New Zealand Kiwifruit Ginger and Honey Cake recipe and I just had to try it! This cake is unique, full of flavor, and simply delicious.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup honey
  • 1/4 cup milk
  • 1 cup chopped peeled kiwifruit
  • 1 tablespoon grated fresh ginger

Method

  1. Preheat oven to 350°F (175°C). Grease a 9-inch (23 cm) cake pan with butter and dust with flour.
  2. In a medium bowl, whisk together the flour, baking powder, ground ginger, cinnamon, nutmeg, and salt.
  3. In a separate large bowl, cream the butter and sugar together until light and fluffy using an electric mixer.
  4. Add the eggs, one at a time, and beat well after each addition.
  5. Gradually stir in the honey and milk until well combined.
  6. Slowly add the flour mixture into the wet ingredients and mix until just combined.
  7. Fold in the chopped kiwifruit and grated ginger.
  8. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. Serve and enjoy!
