This New Zealand Caramel Tarts recipe is a sweet treat I recently tried, and I'm excited to share it with you! This dessert has lots of benefits, like being tasty and easy to make.

Ingredients

  • 1/2 cup unsalted butter at room temperature
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1 cup all-purpose flour
  • 1 can sweetened condensed milk
  • 2 tbsp unsalted butter
  • 2 tbsp golden syrup or corn syrup
  • 1/2 tsp vanilla extract
  • Whipped cream for serving

Method

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, cream the butter and sugar together until light and fluffy.
  3. Add the egg yolk and mix until well combined.
  4. Gradually add the flour, mixing until a soft dough forms.
  5. Press the dough into 8 greased tartlet tins and prick the bottoms with a fork.
  6. Bake the tartlet shells for 10-15 minutes, or until lightly golden. Allow to cool.
  7. In a saucepan, combine the sweetened condensed milk, butter, golden syrup, and vanilla extract. Cook over low heat, stirring constantly, until the mixture thickens and turns a caramel color (about 10-15 minutes).
  8. Pour the caramel mixture into the cooled tartlet shells and allow to cool completely.
  9. Serve with a dollop of whipped cream.

Notes

Tips and Tricks
