Moroccan Spiced Lentils

I recently whipped up a flavorful Moroccan Spiced Lentils recipe that I simply have to share with you.

Ingredients
  

  • 2 cups green lentils rinsed and drained
  • 1 large onion diced
  • 4 garlic cloves minced
  • 1 tbsp fresh ginger grated
  • 1 tbsp olive oil
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

  • Wooden spoon or spatula

Method
 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, and ginger and sauté for 5-7 minutes, or until the onion is translucent.
  3. Add the cumin, coriander, cinnamon, turmeric, and cayenne pepper and cook for 1-2 minutes, or until fragrant.
  4. Add the lentils and vegetable broth and bring to a boil.
  5. Reduce the heat and let the lentils simmer for 20-30 minutes, or until tender.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro.

Notes

Tips and Tricks

Rinse and drain the lentils before cooking to remove any dirt or debris.
Grate the ginger using a microplane or fine grater to make it easier to incorporate into the dish.
Taste and adjust seasoning as needed throughout the cooking process to ensure the lentils are flavorful.
