The Labouyi Bannann recipe is a classic and popular Haitian breakfast meal. Plantains, sometimes known as green bananas.

Ingredients

  • 4 ripe plantains, peeled and sliced
  • 6 cups water
  • 1 cinnamon stick
  • 1 can coconut milk (13.5 oz)
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup sweetened condensed milk (optional)

  • Large Pot
  • Wooden spoon or whisk

Method

  1. In a large pot, bring the water and cinnamon stick to a boil.
  2. Add the sliced plantains and reduce heat to medium-low. Cook for about 20-25 minutes or until the plantains are tender and soft.
  3. Remove the cinnamon stick and use an immersion blender to puree the plantains until smooth.
  4. Add the coconut milk, vanilla extract, ground cinnamon, nutmeg, and salt to the pot. Stir well to combine.
  5. Cook for an additional 10-15 minutes or until the porridge has thickened to your desired consistency. If the porridge is too thick, you can add more water or coconut milk.
  6. Serve hot and drizzle with sweetened condensed milk (if using).
