Ingredients

For the batter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper (optional)
  • 1 cup water
For the filling
  • 2 cups cooked and shredded chicken
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 1/2 salt
  • 1/4 black pepper

Method

  1. In a large mixing bowl, whisk together the flour, baking powder, salt, black pepper, garlic powder, and cayenne pepper (if using).
  2. Gradually add the water to the bowl and whisk until a smooth batter forms. Set aside.
  3. In a skillet, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic to the skillet and cook until softened, about 3-4 minutes.
  4. Add the shredded chicken to the skillet and season with salt and black pepper. Cook for an additional 2-3 minutes.
  5. Drop spoon full of the chicken filling into the batter and mix until well combined.
  6. In a deep pot, heat vegetable oil over medium-high heat until hot.
  7. Using a spoon, drop spoonfuls of the batter and chicken mixture into the hot oil and fry until golden brown and cooked through, about 3-4 minutes.
  8. Using a slotted spoon, remove the fritters from the oil and drain on paper towels.
  9. Serve the chicken fritters hot.

Notes
