Prepare the Green Beans:
- a. Trim the ends of the green beans and discard any damaged or discolored beans.
- b. Rinse the green beans thoroughly under cold water to remove any dirt or impurities.

- c. Add the ground mustard, brown sugar, and cider vinegar to the saucepan.
- d. Pour the cornstarch mixture into the saucepan and stir well to combine.
- e. Cook the sauce over medium heat, stirring constantly, until it thickens to a smooth consistency.
- f. Once the sauce thickens, remove it from heat.
Combine and Cook:
- a. Return the skillet with the speck or prosciutto to the stove over medium heat.
- b. Add the blanched green beans to the skillet and stir to combine with the speck or prosciutto.
- c. Pour the prepared sauce over the green beans and stir gently to coat them evenly.
- d. Reduce the heat to low and let the mixture simmer for about 5 minutes, allowing the flavors to meld together.
- e. Stir occasionally to prevent sticking and ensure even cooking.
Serve:
