This French Vegetarian Ratatouille recipe is one of my all-time favorite dishes. It's a hearty and flavorful dish that is perfect for a healthy and satisfying meal.

2large eggplantsdiced
3medium zucchinisdiced
2red bell peppersdiced
1large onionchopped

1/4cupolive oil
1tbspfresh thyme leaves

Method
Heat the olive oil in a large pot over medium heat.
Add the chopped onions and garlic to the pot and sauté until the onions are soft and translucent.
Add the diced eggplants, zucchinis, and red bell peppers to the pot and stir to combine.
Add the chopped tomatoes and fresh thyme to the pot and stir to combine.
Reduce the heat to low and cover the pot.
Allow the vegetables to cook slowly over low heat for 30-40 minutes, stirring occasionally.
Once the vegetables are soft and tender, remove the pot from heat.
Cut the vegetables into uniform pieces to ensure they cook evenly.Don't overcrowd the pot when cooking the vegetables, as this can cause them to steam rather than sauté.Allow the dish to cook slowly over low heat to allow the flavors to develop fully.
