Ingredients

  • 2 tablespoons olive oil
  • 2 large onions thinly sliced
  • 2 red bell peppers thinly sliced
  • 2 yellow bell peppers thinly sliced
  • 4 cloves of garlic minced
  • 4 large tomatoes diced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Equipment

  • Large skillet or frying pan
  • Cutting board
  • Knife for slicing and mincing
  • Wooden spoon or spatula for stirring

Method

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced onions and cook for about 5 minutes until they start to soften.
  3. Add the sliced red and yellow bell peppers to the skillet and continue cooking for another 5 minutes.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Add the diced tomatoes, paprika, dried thyme, salt, and pepper to the skillet. Stir well to combine all the ingredients.
  6. Reduce the heat to low, cover the skillet, and let the mixture simmer for about 20-25 minutes, stirring occasionally, until the vegetables are tender and the flavors are well combined.
  7. Remove the skillet from the heat and let the Vegetarian Pipérade cool slightly before serving.
