Method

  1. Heat the olive oil in a large pot over medium heat.

  4. Stir in the tomato paste and cook for an additional minute.
  5. Pour in the red wine, vegetable broth, bay leaves, and thyme leaves. Season with salt and pepper to taste.
  6. Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it cook for about 30 minutes, allowing the flavors to meld together.
  7. After 30 minutes, remove the lid and continue cooking for another 15 minutes to thicken the sauce slightly.
  8. Remove the bay leaves before serving.
  9. Serve the Vegetarian Mushroom Bourguignon hot with your choice of accompaniment, such as mashed potatoes or crusty bread.
