I recently tried the Finnish Pytt i Panna recipe, also known as Meat and Vegetable Hash recipe, and I have to say it was amazing!

Ingredients
2lbspotatoespeeled and diced
1large oniondiced
2tbspolive oil
1lbmeatbeef, pork, or chicken, diced
1cupfrozen peas
4large eggs
salt and pepperto taste

Large Skillet
Separate skillet for frying eggs
Cutting board
knife

Method
Heat olive oil in a large skillet over medium heat.
Add the diced potatoes and onions to the skillet, and season with salt and pepper. Cook for 10-15 minutes, or until the potatoes are tender and lightly browned.
Add the diced meat to the skillet and cook for an additional 10-15 minutes, or until the meat is cooked through.
Add the frozen peas to the skillet and cook for 2-3 minutes, or until they are heated through.
In a separate skillet, fry the eggs to your desired doneness.
To serve, divide the meat and vegetable hash among 8 plates, and top each portion with a fried egg.
Use leftover cooked meat to save time on preparation.To save time on cooking, you can microwave the diced potatoes for a few minutes before adding them to the skillet.Make sure to dice the ingredients into small, even-sized pieces for even cooking.
