2lbsfresh salmon filletskin-on
1/2cupcoarse sea salt
1/2cupgranulated sugar
1tablespoonwhole black peppercornscrushed
1/4cupfresh dillchopped
1/4cupaquavitoptional
1lemonsliced
Method
Rinse the salmon fillet under cold water and pat dry with paper towels.
Mix together the sea salt, sugar, and crushed peppercorns in a bowl.
Place the salmon fillet skin-side down in a large dish and sprinkle the salt-sugar mixture over it, pressing it into the flesh.
Sprinkle the chopped dill and aquavit (if using) over the top of the salmon.
Place the lemon slices over the top of the salmon.
Cover the dish with plastic wrap and place in the refrigerator for at least 24 hours.
After 24 hours, remove the salmon from the dish and rinse off the salt-sugar mixture and dill.
Pat the salmon dry with paper towels and slice thinly.
Serve immediately or store in an airtight container in the refrigerator for up to 3 days.
