Ingredients

  • 2 pounds potatoes, peeled and chopped
  • 1 pound kale, stems removed and chopped
  • 1 pound smoked sausage, sliced
  • 1 cup milk
  • ½ cup unsalted butter
  • Salt and pepper to taste

Equipment

  • Large pot for boiling potatoes
  • Another pot for blanching kale
  • Large skillet for cooking smoked sausage
  • Potato masher or fork
  • Measuring cups and spoons

Method

  1. Boil the potatoes in a large pot of salted water for 20-25 minutes, or until tender.
  2. In a separate pot, blanch the kale for 2-3 minutes until wilted. Drain and set aside.
  3. In a large skillet, cook the smoked sausage over medium heat until browned on both sides.
  4. Drain the potatoes and mash them with a potato masher or fork until smooth.
  5. Add the kale, milk, butter, and salt and pepper to the mashed potatoes. Stir until well combined.
  6. Add the sliced smoked sausage to the potato mixture and stir again.
  7. Serve hot and enjoy!

Notes

Tips and Tricks

Use a potato ricer instead of a potato masher for a smoother texture.
To make the stamppot creamier, add more butter or cream cheese to the potato mixture.
If you want a chunkier texture, leave some potato pieces un-mashed.
You can also add chopped onions, garlic or bacon for extra flavor.
