Costa Rican Tortillas de Queso

Ingredients

  • 2 cups of masa harina corn flour
  • 1/2 tsp of salt
  • 1 cup of grated cheese such as Queso Fresco or a similar crumbly cheese
  • 1 1/4 cups of warm water

Equipment

  • Mixing bowl
  • Frying pan
  • Spatula
  • Blender or food processor

Method

  1. In a large mixing bowl, combine the masa harina and salt. Mix well.
  2. Add the grated cheese to the mixing bowl and mix it into the masa harina.
  3. Gradually add warm water to the mixing bowl while stirring the masa harina mixture.
  4. Continue to mix until a dough forms. The dough should be slightly sticky but not too wet.
  5. Divide the dough into 8 equal portions and roll each portion into a ball.
  6. Heat a non-stick pan or griddle over medium-high heat.
  7. Flatten each ball of dough between two pieces of wax paper or plastic wrap to make a tortilla that is about 1/4 inch thick.
  8. Peel off the wax paper or plastic wrap and place the tortilla on the hot pan or griddle.
  9. Cook the tortilla for about 2-3 minutes on each side, or until lightly browned and cooked through.
  10. Remove the tortilla from the pan or griddle and repeat the process with the remaining balls of dough.

Notes

Tips and Tricks

Make sure the frying pan is hot enough before adding the tortilla batter to prevent sticking.
Use a ladle to measure the same amount of batter for each tortilla to ensure they cook evenly.
If the tortillas break while cooking, you can add a little more water to the batter to make it more pliable.
You can also add some herbs or spices to the batter to add more flavor to the tortillas.
