Costa Rican Barbudos (Green Bean Fritters)

Ingredients

  • 1 lb fresh green beans trimmed and cut into small pieces
  • 1 small onion chopped
  • 2 garlic cloves minced
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs beaten
  • Vegetable oil for frying

Equipment

  • Large pot for boiling green beans
  • Large mixing bowl
  • Large skillet for frying
  • Slotted spoon or spatula for flipping the fritters
  • Paper towels for draining excess oil

Method

  1. In a large pot of boiling water, cook the green beans until they are tender, about 5 minutes. Drain and set aside.
  2. In a large bowl, mix together the flour, baking powder, cumin, oregano, salt, and black pepper.
  3. Add the cooked green beans, onion, and garlic to the bowl with the flour mixture and stir to combine.
  4. Add the beaten eggs to the bowl and stir until everything is well coated.
  5. In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat.
  6. Using a tablespoon, drop spoonfuls of the green bean mixture into the hot oil, flattening them slightly with the back of the spoon.
  7. Cook until the fritters are golden brown on one side, then flip and cook until the other side is also golden brown.
  8. Remove the fritters from the oil and drain on paper towels.
  9. Repeat with the remaining green bean mixture until all the fritters are cooked.
  10. Serve hot.

Notes

Tips and Tricks

Use a food processor to chop the green beans, onion, and garlic quickly and easily.
When frying the fritters, use a thermometer to make sure the oil temperature stays at around 375°F for optimal cooking and browning.
