Costa Rican Agua Dulce

A warm and soothing drink made from a special ingredient: raw sugar cane.

Ingredients

  • 2 cups water
  • 1 cup freshly squeezed sugarcane juice
  • 1 cinnamon stick
  • 1 piece of fresh ginger about 1 inch
  • 1/2 cup chopped pineapple
  • 1/2 cup chopped papaya
  • 1/2 cup chopped watermelon
  • 1/2 cup chopped cantaloupe
  • 1/2 cup chopped mango
  • Juice of 1 lime

Equipment

  • Medium-sized pot
  • fine mesh sieve

Method

  1. In a medium-sized pot, combine the water, sugarcane juice, cinnamon stick, and ginger.
  2. Bring the mixture to a boil, then reduce the heat and simmer for 10-15 minutes, or until the liquid has reduced by about half.
  3. Add the chopped fruit to the pot and continue to simmer for another 5-10 minutes, or until the fruit has softened and the flavors have melded together.
  4. Remove the pot from the heat and stir in the lime juice.
  5. Strain the mixture through a fine-mesh sieve, pressing on the fruit to extract as much liquid as possible.
  6. Serve the agua dulce warm or chilled, garnished with additional fruit if desired.

Notes

Tips and Tricks

If you don't have access to fresh sugarcane juice, you can try making your own by blending chopped sugarcane in a blender with a bit of water and straining the mixture through a fine-mesh sieve.
To make the recipe even easier, you can use pre-cut fruit or frozen fruit that has been thawed.
