  • 1 tablespoon paprika sweet smoked
  • 2 tablespoons chili powder
  • 1 tablespoon garlic granulated
  • 1 tablespoon onion granulated
  • 1 tablespoon Creole seasoning
  • ½ teaspoon kosher salt
  • 1 teaspoon cayenne optional

Method

Start by preparing the alligator ribs:
  1. a. Thoroughly rinse the 6 pounds of alligator ribs under cold water.
  2. b. Pat the ribs dry with paper towels.
  3. c. Trim any excess fat or membrane from the ribs using a sharp knife.
Prepare the BBQ sauce:
  1. a. In a mixing bowl, combine 1 cup ketchup, 1 cup cane syrup, 1 cup prepared mustard, ¼ cup Worcestershire sauce, ½ cup apple cider vinegar, and 1 tablespoon finely chopped jalapeno.
  2. b. Mix the ingredients together until well combined.
  3. c. Set the BBQ sauce aside for later use.
Create the herbs and spice blend:
  1. a. In a small bowl, mix 1 tablespoon sweet smoked paprika, 2 tablespoons chili powder, 1 tablespoon granulated garlic, 1 tablespoon granulated onion, 1 tablespoon Creole seasoning, ½ teaspoon kosher salt, and 1 teaspoon cayenne (optional).
  2. b. Ensure that the blend is evenly mixed, and set it aside.
Preheat your smoker:
  1. a. Follow your smoker's manufacturer instructions to preheat it to a temperature of 225°F (107°C).
  2. b. Add wood chips of your choice to create smoke flavor.
Season and smoke the alligator ribs:
  1. a. Generously coat the alligator ribs with the herbs and spice blend created earlier.
  2. b. Place the seasoned ribs on the preheated smoker grates.
  3. c. Smoke the ribs for approximately 3-4 hours, or until they reach an internal temperature of 160°F (71°C).
  4. d. During smoking, baste the ribs with your favorite BBQ sauce (32 ounces) every 30 minutes.
  5. e. Remove the smoked alligator ribs from the smoker and let them rest for 10 minutes before serving.
