A classic shortbread cookie, named after the shape of a bear paw, which is what they resemble when they are baked.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • Pinch of salt

Method

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, cream the softened butter and granulated sugar together.
  3. Add the vanilla extract and mix until well combined.
  4. In another bowl, mix the flour and salt together.
  5. Gradually add the flour mixture to the butter mixture, stirring until the dough comes together.
  6. On a lightly floured surface, roll the dough out to 1/4-inch thickness.
  7. Cut the dough into desired shapes, such as bear paws or rounds.
  8. Place the cookies on a lined baking sheet and bake for 20-25 minutes or until the edges start to turn golden brown.
  9. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes.
  10. Transfer the cookies to a wire rack to cool completely.
