Ingredients

  • 2 cups all-purpose flour
  • 4 eggs
  • 2 cups milk
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup vegetable oil
Optional Fillings:
  • Nutella and banana
  • Jam or jelly
  • Cottage cheese and sugar
  • Spinach and feta cheese
  • Ground walnuts and honey

Equipment

  • Large mixing bowl
  • whisk
  • Non-stick frying pan
  • Spatula
  • Plate for stacking cooked palacinke

Method

  1. In a large mixing bowl, whisk together the flour, sugar, and salt.
  2. In a separate bowl, beat the eggs and add them to the flour mixture. Mix well.
  3. Add the milk, vanilla extract, and vegetable oil to the mixing bowl and whisk until smooth and well combined.
  4. Heat a non-stick frying pan over medium heat. Pour in about 1/4 cup of batter and swirl the pan to spread the batter evenly.
  5. Cook until the edges of the pancake begin to lift and the bottom is golden brown, then flip and cook the other side until golden brown.
  6. Repeat with the remaining batter, stacking the cooked palacinke on top of each other on a plate.
  7. Fill each palacinke with your desired filling and roll it up.
  8. Serve hot and enjoy!

Notes

Tips and Tricks

Use a ladle to pour the batter onto the pan for evenly sized palacinke.
Use a non-stick frying pan to prevent sticking and make flipping easier.
If the batter is too thick, add a splash of milk to thin it out.
