Ingredients

  • 2 lbs. potatoes peeled and grated
  • 2 eggs beaten
  • 1/4 cup all-purpose flour
  • 1/4 cup vegetable oil
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 2 cloves garlic minced
  • 1/4 cup fresh parsley chopped

Equipment

  • Mixing bowl
  • 9x13 inch baking dish

Method

  1. Preheat the oven to 400°F.
  2. In a large mixing bowl, combine the grated potatoes, beaten eggs, flour, vegetable oil, salt, black pepper, garlic, and parsley. Mix well until all the ingredients are combined.
  3. Grease a 9x13 inch baking dish with vegetable oil and pour the potato mixture into the dish.
  4. Spread the mixture evenly and smooth out the top.
  5. Bake in the preheated oven for 45-50 minutes or until the top is golden brown and crispy.
  6. Remove from the oven and let it cool for 10-15 minutes.
  7. Cut into squares and serve hot.

Notes

Tips and Tricks

Use a food processor with a grating attachment to make grating the potatoes faster and easier.
Squeeze out any excess liquid from the grated potatoes before mixing with the other ingredients to prevent the Kljukusa from becoming too wet.
You can add other vegetables to the Kljukusa mixture, such as grated zucchini or carrots, to add more flavor and texture.
