Machuca is a mashed plantain dish that is a popular comfort food in Belize, and it's now become one of my favorites.

Ingredients

  • 4 ripe plantains peeled and cut into small pieces
  • 1/4 cup butter
  • 1/4 cup milk
  • 2 cloves garlic minced
  • 1/2 tsp salt

Equipment

  • Large pot for boiling plantains
  • Potato masher or fork for mashing plantains
  • Non-stick pan or skillet for cooking the mashed plantains with other ingredients

Method

  1. In a large pot, boil the plantains until they are soft, about 15-20 minutes.
  2. Drain the plantains and mash them with a potato masher or fork until they are smooth.
  3. Add the butter, milk, garlic, and salt to the mashed plantains and mix until well combined.
  4. Cook the mixture over low heat, stirring constantly, for 5-10 minutes, until heated through.

Notes

Tips and Tricks

Use ripe plantains for a sweeter and softer consistency.
