I recently discovered a delicious Belizean Cow Foot Soup recipe. It's a hearty soup made with cow's feet and various vegetables and spices.

3poundsof cow's feetcleaned and chopped
1oniondiced
3clovesof garlicminced
2carrotspeeled and diced
2stalks of celerydiced
2potatoespeeled and diced
1can of diced tomatoes
1tablespoonof tomato paste
1teaspoonof thyme
1teaspoonof cumin
Salt and pepperto taste

Equipment
Large pot for boiling cow's feet and making soup
Cutting board and knife for chopping vegetables
Can opener for opening the can of diced tomatoes
Wooden spoon for stirring the soup
Method
In a large pot, add the cow's feet and enough water to cover them. Bring to a boil, then reduce heat and let simmer for 30 minutes.
Drain the water and rinse the cow's feet. Add fresh water to the pot, enough to cover the cow's feet again. Add the onion and garlic and bring to a boil.
Reduce heat and let simmer for 1 hour, or until the cow's feet are tender.
Add the carrots, celery, and potatoes to the pot and enough water to cover the vegetables. Bring to a boil, then reduce heat and let simmer for 20 minutes.
Add the diced tomatoes, tomato paste, thyme, and cumin to the pot. Season with salt and pepper, to taste. Add more water, if needed.
Let the soup simmer for an additional 10 minutes, or until all the vegetables are tender and the flavors have melded together.
You can prep the vegetables ahead of time to make the cooking process easier.Skim any foam that rises to the top of the soup while cooking to ensure a clear broth.Make a larger batch of the soup and freeze in portions for quick and easy meals later on.
