Ingredients

For the Meat:
  • 2 lbs. beef sirloin, thinly sliced
  • 2 lbs. chicken breasts, boneless and skinless, thinly sliced
  • 2 lbs. pork tenderloin, thinly sliced
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/4 cup red wine vinegar
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh oregano
  • 1/4 cup chopped fresh cilantro
  • 4 garlic cloves, minced
  • 2 tbsp. smoked paprika
  • 2 tbsp. ground cumin
  • 2 tbsp. dried oregano
  • 2 tsp salt
  • 1 tsp black pepper
  • 1/4 cup water
  • 8 skewers
For the Sauce:
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • 2 tbsp. lemon juice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper

Equipment

  • Large bowl for marinating
  • Skewers for grilling

Method

  1. In a large bowl, combine the olive oil, lemon juice, red wine vinegar, chopped parsley, chopped oregano, chopped cilantro, minced garlic, smoked paprika, ground cumin, dried oregano, salt, and black pepper. Mix well to create the marinade.
  2. Add the thinly sliced beef sirloin, chicken breasts, and pork tenderloin to the marinade. Stir to coat the meat evenly. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight.
  3. Preheat your grill to medium-high heat.
  4. Thread the marinated meat onto the skewers, alternating the types of meat to create a mixed grill.
  5. Brush the grill grates with oil to prevent the meat from sticking. Grill the skewers for 10-15 minutes, turning occasionally, until the meat is cooked through and lightly charred.
  6. While the meat is grilling, prepare the sauce. In a small bowl, combine the mayonnaise, sour cream, chopped parsley, chopped cilantro, chopped green onions, lemon juice, salt, black pepper, and cayenne pepper. Mix well.
  7. Serve the grilled meat skewers with the sauce on the side.

Notes

Tips and Tricks

To save time, marinate the meat overnight so it's ready to grill the next day.
If using wooden skewers, soak them in water for at least 30 minutes before using to prevent them from burning on the grill.
Cut the meat into similar-sized pieces to ensure even cooking.
Don't overcrowd the skewers to allow for even cooking.
