- a. In the bowl, add 2 pounds of ground lamb meat minced.
- b. Add 1 tablespoon of ground cumin.
- c. Add 1 tablespoon of ground coriander.

- e. Add 2 teaspoons of ground cinnamon.
- f. Add 1/2 teaspoon of cayenne pepper.
- g. Add 2 cloves of garlic, minced.
- h. Add 1 medium-sized onion, finely chopped.
- i. Add 1 cup of breadcrumbs.
- j. Crack 1 egg into the bowl.
- k. Season with salt and pepper to taste.
Mix the ingredients thoroughly:
- a. Use your hands to mix all the ingredients together until well combined.
- b. Ensure that the spices are evenly distributed throughout the mixture.
- c. Make sure the egg is fully incorporated and acts as a binder for the ingredients.
Shape the kofta mixture:
- a. Divide the mixture into 8 equal portions.
- b. Take one portion and roll it between your palms to form a cylindrical kofta shape.
- c. Repeat with the remaining portions, shaping them all into koftas of the same size.
Preheat the barbecue grill:
- a. Preheat the barbecue grill to medium-high heat.
Grill the lamb koftas:
- a. Place the koftas on the preheated grill, leaving space between each one.
- b. Cook the koftas for about 12-15 minutes, turning them occasionally to ensure even cooking and browning.
- c. Use tongs to carefully flip the koftas, ensuring they cook evenly on all sides.
Check for doneness:
- a. Use a meat thermometer to check the internal temperature of the koftas.
- b. They should reach a minimum temperature of 160°F (71°C) to ensure they are cooked through.
Let the koftas rest:
- a. Remove the cooked koftas from the grill and let them rest for a few minutes.
- b. Resting allows the juices to redistribute and the koftas to become tender and flavorful.
Serve and enjoy:
